TOSCANO - BOLGHERI VERDE. What sounds good, tastes good. A top-quality olive oil – indeed, a Super Tuscan – from this year's 2022 campaign; produced from a single vineyard with a pure Frantoio olive grove in the sleepy hamlet of Bolgheri, owned by the renowned Fonte di Foiano estate from Castgneto Carducci. The appearance of this fabulous artisanal product is – as one immediately recognizes – a fitting tribute to the winemakers of this prestigious wine region, who work in friendly proximity to the olive and olive oil artisans of Fonte di Foiano.
Stars adorning the night sky above the Tyrrhenian Sea; cypress trees lining the famous Viale dei Cipressi at the entrance to Bolgheri; saline seawater carried inland by the constant winds; and soil rich in clay, limestone, marl, and sand – this is Bolgheri, the region that made Italian winemaking à la française world-renowned and the Super Tuscans so highly sought after. Here, not only are some of the world's finest wines produced, but also, through meticulous and painstaking work at a facility called Fonte di Foiano, some of the world's best olive oils are created. TOSCANO - BOLGHERI VERDE is one of them.
From October 3rd to 7th, 2022, beautiful, plump, and juicy green Frantoio olives were harvested in rapid succession from the Fonte di Foianos olive trees, some of which are very old and rooted in Bolgheri. Within just two hours, they were processed into oil in the Mori TEM experimental mill, with a malaxation time of only five minutes at 20°C. Maximum quality with minimal yield. The resulting cloudy oil was immediately filtered after decanting. An emerald-green elixir emerged, from which Paolo and Simone Di Gaetano meticulously blended each production batch into an extraordinary cuvée of incredible depth and complexity. This luminous cuvée bears the simple yet evocative name TOSCANO - BOLGHERI VERDE. It is bottled in 7.5 dl clear glass wine bottles in the "Bordeaux" format. A true Super Tuscan indeed! Except that the inspiration is not at all to be found in the Bordelaise region.
