Casas de Hualdo Cornicabra is an intensely green-fruited premium extra virgin olive oil with a distinctive character. On the nose, its aromas are reminiscent of freshly cut grass, green nutmeg, fresh olive leaves, and a hint of apple. On the palate, it is full-bodied, opulent, and yet dry. Strong bitter notes are immediately apparent, followed by a proud spiciness that lingers – an oil with impact and persistence.Origin & Processing
The Cornicabra olive – "Goat's Horn" – is the traditional variety of Castile-La Mancha. Its elliptical shape with a curved tip, with a little imagination, is reminiscent of a goat's horn. Its distinctive color is also characteristic, never exceeding a Bordeaux red even when fully ripe. Cornicabra is the only olive variety from the former Spanish capital region recognized by the protected designation of origin DOP Montes de Toledo . At Casas de Hualdo, it grows in traditionally planted olive groves at higher altitudes on light, calcareous soils and is harvested there in mid- to late autumn. Within a maximum of six hours after picking, the olives are gently cold-extracted in the estate's state-of-the-art mill to obtain a juice of the highest quality.background

It harmonizes beautifully with braised dishes – with or without meat – and is a perfect match for traditional dishes like migas , Toledo's hunter's breakfast. It's also ideal with tapas such as cecina, patatas bravas, or pinchos morunos, as well as with roast lamb, hearty soups, stews, and grilled vegetables (especially artichokes, eggplant, and zucchini). Surprisingly good, too, with rich chocolate, such as mousse or couvert.
