Manzanilla - a table olive conquers olive oil lovers
Manzanilla is a well-known table olive variety originating in Cáceres, a province in Extremadura. The region lies largely on the Meseta plateau, the least populated area of Spain. Its climate is more maritime and milder than inland, conducive to olive cultivation. However, the Manzanilla olives grown by Casas de Hualdo have also adapted very well to the conditions of Castile-La Mancha. They thrive on Hualdo's estate under expert observation and careful cultivation. Manzanilla olives are quite large, comparable to Picual olives. However, they are significantly rounder and lack the distinct nipple found on the Picual olive. A characteristic feature of the Manzanilla olive is its juicy, very appetizing flesh. Biting into a fresh, green Manzanilla olive can be reminiscent of a Granny Smith apple.
During the processing of the olives, specifically during crushing and the subsequent stirring of the pulp, compounds are formed whose aromas are reminiscent of fresh tomato flesh and juice, as well as tomato leaves. Last but not least, Casas de Hualdo's Manzanilla oil also contains notes of freshly cut grass and chamomile. No wonder – after all, Manzanilla means chamomile.
