Sensors
Reserva de Familia from Casas de Hualdo is an intensely fruity premium extra virgin olive oil of exceptional complexity and depth. On the nose, it unfolds green aromas of tomato leaf, freshly cut grass, green nut skin, artichoke, and apple, complemented by spicy, balsamic nuances of field herbs. On the palate, it displays both vitality and elegance: intense fruit with vegetal, green aromatics, pronounced bitter notes, and a finely interwoven spiciness, all culminating in a persistent, multi-layered finish. This is a truly great olive oil!

Origin & Processing
For this blend, small batches of the estate's four grape varieties—Arbequina, Picual, Cornicabra, and Manzanilla—are harvested and processed separately. Each variety is picked on its ideal day and cold-extracted fresh in Casas de Hualdo's state-of-the-art mill. Only in the blending of these four single-varietal oils do balance, depth, and—if the blending master so desires—harmony emerge.

background
With approximately 7,000 hectares of nature reserve, of which only 600 hectares are planted with olive trees, Casas de Hualdo is one of the most impressive olive estates in the world. Red deer, mouflon, wild boar, and numerous other animal species contribute to the biodiversity of this unique landscape along the Tagus River. Reserva de Familia embodies this ambition: it combines craftsmanship, precision, care, and the bounty of nature to produce an extra virgin olive oil that, for us—and for many other critics—is among the very best in the world.

Food pairing
An oil for haute cuisine as well as simple country cooking: Reserva de Familia enhances complex dishes such as seafood risotto, venison ragout in red wine sauce, or braised beef cheeks with chocolate sauce. It harmonizes perfectly with chard tarts, Brussels sprouts, spinach, stuffed tomatoes, or roasted peppers. It also unfolds its full elegance with arugula salad with radishes and fresh onions, or with tapas featuring fine charcuterie and aged cheeses.

Note from the Master of Olive Oil
“Casas de Hualdo is more than just an olive estate to me – it’s paradise. Every time I’m there, gazing from a hilltop over the valleys and forests, I’m deeply moved. On some 7,000 hectares of nature, you encounter red deer, mouflon, wild boar, and foxes; the morning sun casts silvery highlights on the cornicabra groves, while birdsong heralds the new day. Here, I’ve experienced how humans and nature can live in harmony. All these impressions are distilled for me in Reserva de Familia . Even the bottle tells a story – elegant black with a gold cap, a numbered textile label, and delicate silhouettes of the animals that live at Hualdo.” But even more than its appearance, it's the contents that move me: an intense, multifaceted blend of Cornicabra, Arbequina, Picual, and Manzanilla, masterfully composed by Ignacio Segura, the blending master and internationally renowned olive oil expert who also works for the King of Morocco and whom I am fortunate enough to call a friend. When I enhance simple dishes in my kitchen with this oil, they are elevated to a new level—and I am immediately reminded of the magic of this place. For me, Reserva de Familia is therefore not just an olive oil, but a feeling of home in paradise.” – Silvan Brun, Master of Olive Oil

Import, Storage & Quality Assurance: To ensure the enjoyment doesn't end with the product description, this oil was imported into Switzerland under temperature-controlled conditions (between 6 and 18 °C, depending on the truck). The oil is also stored at a constant ambient temperature of 15–18 °C, protected from light. This temperature-controlled logistics preserves the chemical, physiological, and sensory quality of the olive oil to the best of our ability. In the olive oil business – especially in the premium segment – such meticulous care is essential, yet evoo.expert is one of the very few retailers who consistently maintain an unbroken cold chain. You can smell and taste the difference.
