Finca la Torre Cornicabra is the most powerful and uncompromising olive oil in the Finca la Torre range. Produced exclusively from the heritage Cornicabra olive, originally from Castile-La Mancha, it presents itself as green-fruited, intense, and with a pronounced structure. The nose is dominated by fresh vegetal notes: green stems, olive leaves, and herbs, accompanied by hints of artichoke and green apple. On the palate, the oil is extremely fruity, distinctly bitter, astringent, and pronouncedly peppery – with an immediate, assertive attack and a long, peppery finish.
Origin & Processing
This oil comes from Finca La Torre in Bobadilla (Málaga), a historic olive estate with over 2,200 years of agricultural history. The Cornicabra olives grow on poor, calcareous soils and are known for their resilience to challenging climatic conditions. Biodynamic Demeter cultivation demands the utmost precision: Cornicabra is high-yielding but demanding – particularly due to the firm fruit structure, which makes mechanical harvesting difficult. Under the direction of agronomist Víctor Manuel Pérez Serrano, the olives are harvested at a precisely defined stage of ripeness and immediately processed in the estate's own mill to preserve maximum freshness, texture, and phenolic density.

Cornicabra is a variety with character – and demands producers with conviction. Finca la Torre follows a clear maxim: quality is not a result, but a decision. Borja Adrián Sanz, the estate's sales director, calls their own standards "Guardians of Excellence." This attitude is particularly evident in their Cornicabra: high bitterness, intense pungency, and phenolic density are not masked, but deliberately embraced. It is no coincidence that Finca la Torre is regularly ranked among the best olive oil producers in Spain. Food pairing
This Cornicabra demands substance from its pairing partner. It is therefore ideally served with robust dishes that can support its richness. Examples include: excellent with grilled or braised beef, lamb, or game; with grilled vegetables; with rich fresh cheese; with mature goat cheese. It is also perfect as a finishing touch over legumes or rustic sourdough bread. An oil for serious cooking – not to be hidden, but to be accentuated.

Import, warehousing & quality assurance
To ensure the enjoyment doesn't end with the product description, this oil was imported into Switzerland under temperature-controlled conditions (between 6 and 18 °C, depending on the truck).
