Apogée is an intensely fruity, highly aromatic extra virgin olive oil that captures the essence of the single-varietal Bouteillan at a point of cosmic clarity. The oil presents itself as green, luminous, and simply impressive. On the nose, a very fresh, mysterious aroma rises, dominated by precise, almost ethereal notes of green banana and a sharp hint of lemon. On the palate, the intense fruit reveals a pure form of being without bitterness. It culminates in a long, clear, and peppery finish that lingers like a luminous trail.

Origin & Processing

This legendary oil stems from the deep connection between Eric Martin and the terroir of Orgnac-l'Aven. It is a plot-selected blend of olives grown exclusively on the Urgon limestone. For Apogée, the Bouteillan variety is harvested at a moment of peak vivacity – during the first days of the olive harvest in October 2025. The name Apogée (zenith) recalls the original intention to synchronize the harvest with the apogee of the moon (the point in its orbit farthest from Earth). However, because the apogee in October 2025 occurred on the second-to-last day of the month and therefore did not coincide with the zenith of the Bouteillan olives, Eric Martin harvested the fruit at the beginning of October. After the swift harvest, the olives are crushed and then subjected to controlled malaxation to extract the perfect aroma from the olive paste. The oil is then double-centrifuged and immediately filtered. This process is an alchemical precision that guarantees the oil's freshness and stability. So that it's sure to bring you joy!

Import, warehousing & quality assurance

To ensure the enjoyment doesn't end with the product description, this oil was imported to Switzerland under temperature-controlled conditions (between 6 and 18 °C, depending on the truck).
