Sauvage is a medium to intensely fruity extra virgin olive oil. Angular and edgy, it represents the purest expression of La Magnanerie's style.
As a French blend, made from single-varietal Aglandau, Bouteillan, and Picholine grapes, it possesses a complex character, defined by a green, vegetal bouquet with pronounced notes of raw artichoke and fresh mustard. On the palate, it is highly interesting and no less distinctive; it presents itself as tart, bitter, and spicy. The impression is deeply vegetal and vibrant, culminating in a long, peppery finish.
Origin & Processing
This oil comes from Orgnac-l'Aven, a small village in the Ardèche region of southern France, perched atop a vast limestone plateau – the home of Eric Martin of La Magnanerie. The olives thrive in the red clay soils of the Tertiary period and Urgon limestone. This barren, stony terroir is deeply drained, contributing to the oil's clarity and expressiveness. The Aglandau, Bouteillan, and Picholine varieties were harvested early in the first half of October 2025 to ensure their full biophenol content. Oil extraction takes place immediately after harvesting at the estate's own Amenduni mill: the olives are sorted, washed, and destemmed, then processed using a knife-broyage (crushing) and briefly malaxage (kneading) to yield a potent and clear olive juice.

The name is no coincidence. The Cuvée Sauvage is the signature oil, the soul of Domaina La Magnanerie. An untamed, distinctive oil that resists being bottled. This oil is a powerful counterpoint to uniform global trends. It is a true "fruité vert"—something rarely found in France.

To ensure the enjoyment doesn't end with the product description, this oil was imported to Switzerland under temperature-controlled conditions (between 6 and 18 °C, depending on the truck).
