Sensors
Oro Bailén Hojiblanca 2025 is an exceptionally green-fruited, precisely defined extra virgin olive oil – powerful, clearly contoured, and possessing an aromatic tension rarely found. The nose reveals fresh grass, artichoke, kiwi, and green apple peel. Subtly nuanced hints of almond and unripe banana complete the picture. On the palate, the oil is firm, silky, and deeply aromatic: an elegant, well-integrated bitterness, followed by a late-onset, piquant, and all the more lingering warming spiciness.
The sensory evaluation by the accredited panel confirms this with a median fruitiness score of 7.3 – naturally classified as Extra Virgin.
Origin & Processing
The olives for this oil come from Hojiblanca groves maintained by Oro Bailén and located near the mill. The Hojiblanca olive, originally from Córdoba and Málaga, is also cultivated in this region under ideal conditions. This year's harvest took place in the first half of October and was strictly quality-oriented. The healthy olives were processed into exquisite oil in the mill itself within just two hours. This uncompromising production philosophy is one of the reasons why Oro Bailén was awarded the title of "World's Best Olive Oils" as the best olive oil mill in the world in 2024/2025 .
The chemical analysis results impressively reflect this care:
- Free fatty acids (based on oleic acid): 0.10%

- K232: 1.79 | K270: 0.18 | ΔK < 0.01

background
Oro Bailén Hojiblanca is an oil that captures the essence of an agricultural paradigm: precision, passion, and respect for the product. For years, the Oro Bailén mill has been a symbol of what happens when traditional craftsmanship, a deep understanding of the land, and state-of-the-art technology come together. This is why Aceites Oro Bailén is among the most consistently top-quality producers in Europe.
Food pairing
An intense, full-bodied, yet sweet oil that complements a wide variety of dishes. What more could you want? Whether it's beef or tuna carpaccio, bruschetta, or all kinds of tomato variations, or confit fish, especially cod, but also sole, with a beautifully creamy burrata or even two-year-aged goat cheese from Dallenwil, or with steamed and braised vegetables, and of course, with many different salads.
Note from the Master of Olive Oil
"Hojiblanca from Oro Bailén is a great oil that can be used every day and on practically any occasion."
– Silvan Brun, Master of Olive Oil
Import, warehousing & quality assurance
To ensure the enjoyment doesn't end with the product description, this oil was imported into Switzerland under temperature-controlled conditions (between 6 and 18 °C, depending on the truck). The oil is also stored at a constant ambient temperature of 15–18 °C, protected from light. This temperature-controlled logistics preserves the chemical, physiological, and sensory quality of the olive oil to the best of our ability. In the olive oil business—especially in the premium segment—such meticulous care is essential, yet evoo.expert is one of the very few retailers who consistently maintain an unbroken cold chain. You can smell and taste the difference.
