Trebbio Frantoio is a single-varietal, biodynamic extra virgin olive oil made from what is arguably Tuscany's most famous grape variety – and an oil with a truly distinctive character. The trees grow on the hillsides surrounding Castello del Trebbio near Scarperia, between 300 and 450 meters above sea level. The stony soils, the microclimate of the Mugello hills, and the biodynamic cultivation (Demeter-certified) create the ideal conditions for an expressive, varietally typical, and yet remarkably elegant oil.
The olives are harvested by hand and processed within a few hours in the estate's own mill – a crucial step for quality. The result is an olive oil that delights both experienced tasters and discerning chefs.
On the nose, aromas of fresh green almonds , artichoke , wild herbs , and a hint of apple unfold. On the palate, the Trebbio Frantoio reveals a fine structure, a pleasantly creamy texture, a balanced, gently lingering bitterness, and a precise, yet never intrusive, spiciness. The oil is never loud, but it remains present – both in the memory and the aftertaste.
